Damchi Kimchi is a local kimchi maker in Amsterdam, bringing fresh, authentic Korean flavors to the local community since 2023. Our name comes from the Korean word ‘담다’ (dam-da), which means to make kimchi. It also sounds like the last part of “Amsterdam,” reflecting our goal of connecting Korean food traditions with the local culture. Made fresh every week, Damchi Kimchi offers a variety of flavors, from young, crisp kimchi to deep, aged varieties. By blending traditional recipes with local ingredients, we’re adapting kimchi with locally grown vegetables for a fresh, regional twist.
All our kimchi is now 100% plant-based, replacing traditional fish sauce with our own special ‘Damchi Dashi’ for a rich, umami depth.
